Ingredients
- 1 pound Brussels sprouts
- 1/4 cup cranberries
- 1/4 cup pecans
- 2 tablespoons Greek Feta cheese
- 2 tablespoons olive oil
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander seeds
Instructions
Cut off the ends of Brussels sprouts and chop them into halves. Steam cook the Brussels sprouts over boiling water for 10-15 minutes. In a skillet, warm the olive oil at medium heat; add cumin and coriander seeds to the oil. When the seeds start cooking in the oil, add the steam-cooked Brussels sprouts. Stir and cook for 3-5 minutes. Add cracked pecans and cranberries to the stir-fry and cook for additional 2-3 minutes. Place in a serving dish and mix in feta cheese. Serve warm!
