Dr.‌ ‌Anup’s‌ ‌Bitter‌ ‌Melon‌ ‌Fry

Bitter melon (or gourd) and fenugreek are wonderful diabetes remedies. Bitter melon has a bitter taste (hence, the name) that stimulates the liver and gallbladders in detoxifying action as well as promotes cellular healing through activated antioxidant enzymes. This dish provides support for the body to increase insulin production as well as improve insulin sensitivity.

Ingredients

  • 1 pound Bitter melon, chopped and de-seeded
  • 2-3 cloves of garlic, diced
  • 1/2 small yellow onion, diced
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon fenugreek seeds
  • 2 tablespoon coconut oil
  • Salt to taste

Instructions

In a non-stick pan, warm coconut oil on medium heat with diced onions, until lightly brown. Add garlic, fenugreek seeds, and turmeric, and cook for 2 minutes. Add bitter melons and stir in the spiced oil, cover and cook on medium heat for 10 minutes, stirring every 2-3 minutes. Serve as a side dish.
