Dr.‌ ‌Anup’s‌ ‌Brussels‌ ‌Sprouts‌ ‌Stir-Fry‌ ‌Salad‌

Brussels sprouts are packed with the goodness of cruciferous vegetables, which includes a detoxing and immune-boosting ability unlike most other household vegetables. The light bitter in the Brussels sprouts are sulfur antioxidants that promote liver detoxing. Additionally, this dish has many supportive ingredients, like mustard and cumin seeds (which promote digestion) as well as pecans, cranberries, and cheese (which complete the texture and flavor profile). Enjoy this easy-to-cook recipe.

Ingredients

  • 1 pound Brussels sprouts
  • 1/4 cup cranberries
  • 1/4 cup pecans
  • 2 tablespoons Greek Feta cheese
  • 2 tablespoons olive oil
  • 1/4 teaspoon cumin
  • 1/4 teaspoon coriander seeds

Instructions

Cut off the ends of Brussels sprouts and chop them into halves. Steam cook the Brussels sprouts over boiling water for 10-15 minutes. In a skillet, warm the olive oil at medium heat; add cumin and coriander seeds to the oil. When the seeds start cooking in the oil, add the steam-cooked Brussels sprouts. Stir and cook for 3-5 minutes. Add cracked pecans and cranberries to the stir-fry and cook for additional 2-3 minutes. Place in a serving dish and mix in feta cheese. Serve warm!
