The Gajar Halwa (carrot pudding) is a favorite dessert. It is a delightful and flavorful dish that has everything grandma would wish for you. Carrots are a rich source of beta-carotene (which supports health of the eyes and liver), antioxidants (which support activity of the immune system), and many vitamins and minerals. Gajar Halwa is good medicine for the sweetness and love it brings, but enjoy this sweet treat mindfully and in moderation.
Ingredients
- 2-3 cups carrots, peeled and grated
- 1 cup organic whole milk
- 2 tablespoons Ghee or coconut oil
- 4-6 teaspoons cane sugar (as desired)
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon cinnamon
- 15-20 whole cashews
Instructions
Heat milk and carrots in a sauce pan on medium. Bring the mixture to boil as you add the cardamom and cinnamon. Once boiling, turn to the heat to low and let the milk evaporate until it is mostly condensed. Add Ghee (or coconut oil) and sugar. Stir occasionally and cook for an additional 10 minutes on medium-low heat. Remove from burner, add cashews, and serve hot!!
